May recipe: Wakame Avacado Salad
Soak a 6 in. strip of Wakame for 10 minutes in hot water- drain. Cut out stipe (stem) and cut into small squares.
Cut avocado into small cubes and toss with seaweed and put over mixed greens.
Make a dressing by grating or pressing a small piece of ginger and a clove of garlic and mix with the juice of half lemon, a teaspoon of sweetener and a dash of salt and cayenne pepper. Alter to taste.
Drizzle over salad and enjoy!
Serve over cool Brown rice!
